From South America, yerba mate has long been appreciated for its significant nutritional and medicinal properties. It is low in caffeine and has approximately 50% more antioxidants than green tea. Try brewing in the traditional mate gourd with bombilla (straw).
Use 1 tsp per cup or 1 rounded tsp per person for a teapot. Pour freshly boiled water, cooled to 80-90C, over the leaves and infuse for 2-3 minutes. yerba maté

Some researchers suggest that the stimulating effect of maté comes from mateine, a compound similar to caffeine but considered to produce a smoother, more sustained energy without the jitteriness.
