Also known as ti kuan yin this famous Fujian tea has attractive large leaves that produce a beautiful golden infusion with a rich roasted, slightly nutty flavour and a linger-in-the-mouth finish.
Use 1-2 tsp per teapot. Pour freshly boiled water over the leaves. Quickly pour off the water and let the leaves breathe for a moment or two. Refill again with boiled water and infuse for 3-5 minutes. Can be infused a number of times.oolong tea.
