Vivid, grassy matcha runs through both the sponge and the silky frosting of these stunning cupcakes. A show-stopper for any occasion, and a genuine treat for green tea devotees.
Makes: 20 cupcakes
Ingredients
- 110g butter
- 2 cups sugar
- 2 eggs + 2 egg yolks
- 3 cups flour
- 2 tsp baking powder
- ⅛ tsp salt
- 1 cup milk
- 1 Tbsp Matcha powder
Frosting
- 110g butter
- 2 Tbsp cream
- 1 Tbsp Matcha powder
- 3 cups icing sugar
Method
- Preheat oven to 180°C. Line cupcake trays with paper cases.
- Beat butter on high until soft. Add sugar and beat until light and fluffy.
- Add eggs and egg yolks one at a time, beating well after each addition.
- Sift together flour, baking powder and salt. Add to the batter and mix until well combined.
- Whisk matcha into the milk, then slowly add to the batter and mix until smooth.
- Spoon batter into cupcake cases until three-quarters full. Bake for 12–20 minutes depending on size. Cool completely.
- For the frosting, make a paste by mixing matcha with cream. Beat butter briefly, then add sifted icing sugar and matcha paste. Whip until smooth, light and airy. Frost cooled cupcakes.
