Matcha Cupcakes

Vivid, grassy matcha runs through both the sponge and the silky frosting of these stunning cupcakes. A show-stopper for any occasion, and a genuine treat for green tea devotees.

Makes: 20 cupcakes

Ingredients

  • 110g butter
  • 2 cups sugar
  • 2 eggs + 2 egg yolks
  • 3 cups flour
  • 2 tsp baking powder
  • ⅛ tsp salt
  • 1 cup milk
  • 1 Tbsp Matcha powder

Frosting

  • 110g butter
  • 2 Tbsp cream
  • 1 Tbsp Matcha powder
  • 3 cups icing sugar

Method

  1. Preheat oven to 180°C. Line cupcake trays with paper cases.
  2. Beat butter on high until soft. Add sugar and beat until light and fluffy.
  3. Add eggs and egg yolks one at a time, beating well after each addition.
  4. Sift together flour, baking powder and salt. Add to the batter and mix until well combined.
  5. Whisk matcha into the milk, then slowly add to the batter and mix until smooth.
  6. Spoon batter into cupcake cases until three-quarters full. Bake for 12–20 minutes depending on size. Cool completely.
  7. For the frosting, make a paste by mixing matcha with cream. Beat butter briefly, then add sifted icing sugar and matcha paste. Whip until smooth, light and airy. Frost cooled cupcakes.
