Matcha Cookies
Made with Matcha
Crisp, buttery cookies with that distinctive emerald green hue and grassy, umami-rich matcha flavour. Rolled in sugar before baking, they're as beautiful as they are delicious.
Makes: 12 cookies
Ingredients
- ¾ cup icing sugar
- 1½ Tbsp Matcha powder
- 140g butter
- 1¾ cups all-purpose flour
- 3 large egg yolks
- 1 cup granulated sugar (for rolling)
Method
- Preheat oven to 180°C. Line a baking sheet with parchment paper.
- Whisk icing sugar and matcha together in a bowl.
- Beat butter and the matcha-sugar mixture in a stand mixer until smooth and light in colour.
- Add flour and mix until well combined. Add egg yolks and mix until incorporated.
- Form the dough into a disk and refrigerate until firm, about 30 minutes.
- Roll dough out to ⅛ inch (3mm) thickness and cut into shapes.
- Toss each cut cookie in granulated sugar to coat. Place on the lined baking sheet.
- Bake at 180°C for 12–15 minutes until just set. Cool on a wire rack.
