Oolong teas

As with green and black teas, oolong teas are produced from the leaf of the Camillia Sinensis bush. They are only semi-fermented, resulting in a brew somewhere between green and black teas. Always whole leaf teas, oolong teas undergo a special process of wilting in direct sunlight followed by careful 'bruising' of the leaves' outer edges and time to allow varying levels of oxidation before firing.
